Mille-feuille has been in cookbooks ever since the 16th century. (Historical much?) Traditionally, this French pastry is made up of alternating layers of puff pastry and pastry cream with the confectioner's sugar shimmering over the top.

Here’s a quick trivia about this recipe from The Edgy Veg. This vegan mille-feuille is inspired by the iconic Gordon Ramsay.

To recreate this vegan dessert, prepare these ingredients:

  • a sheet of ready-rolled vegan-friendly puff pastry
  • three tablespoons of organic icing sugar (you should prepare some more to for the shimmering)
  • one tablespoon of tapioca starch
  • one teaspoon of vanilla extract
  • two cans of full-fat coconut milk
  • a zest of 1 orange
  • ½ tablespoon of orange-flavored liqueur
  • a pint of fresh raspberries

This vegan French silk pie experience will bring you to a gastronomical nirvana, and that’s not an exaggeration. Just follow the easy instructions by Unconventional Baker:

For some quick heads-up, prep these ingredients:

The crust:

  • 1½ cups of raw brazil nuts*
  • 8 soft Medjool dates (preferably pitted)
  • ⅛ teaspoon of salt
  • 2 tablespoons raw agave (you can also use maple syrup)
  • 2 tablespoons of cacao powder

The filling:

  • 300 grams of regular (or firm) tofu (make sure it’s not cold)
  • ⅔ cup of chopped dairy-free dark chocolate
  • ⅓ cup of cacao powder
  • ⅓ cup of raw agave (or maple syrup)
  • 1 teaspoon of pure vanilla extract
  • A pinch of salt
  • A pinch of instant espresso powder
