The Vegan Recipe Club’s Seitan Bacon

My new favorite kitchen experiment is making vegan seitan bacon, and it turned out better than I even hoped. These "bacon" slices are perfectly chewy like actual bacon, but with a crispy, salty outside. It's amazing on sandwiches or kale salad, but also really adds flavor to potatoes, beans, and faux-chicken dishes. It's easy to make and really delicious, especially with some homemade mayo!
