Vegan bacon used to be just a dream. However, in the last few years, there has been an explosion of new vegan meat alternatives onto the market. These days, you can get tofu bacon, mushroom bacon and other interesting choices at the supermarket or served at vegan culinary cruises

The Vegan Recipe Club’s Seitan Bacon

My new favorite kitchen experiment is making vegan seitan bacon, and it turned out better than I even hoped. These "bacon" slices are perfectly chewy like actual bacon, but with a crispy, salty outside. It's amazing on sandwiches or kale salad, but also really adds flavor to potatoes, beans, and faux-chicken dishes. It's easy to make and really delicious, especially with some homemade mayo!
