The Art of Eating: 3 Ways to Eat Tomato

It’s that time of the year to reap the efforts you did this year to maintain your kitchen garden. There are a lot of ways to make use of tomato (aside from using it to make pizza or pasta sauce). Among others, tomato is considered to be a staple ingredient in many vegan dishes. Tomato is also rich in vitamin C and lycopene. So how do you really maximize the use of this versatile vegetable?

Sundried Tomatoes



Sundried tomatoes can go great in a Pomodoro pasta recipe or salads that are famous in vegan culinary cruises. Although these take a little time to make, it’s really easy to set them up. Slice a handful of tomatoes or a quantity of your choice (preferably an amount enough to fit in available jars at home). You may opt to dry it under a full-sun for a few days or bake them in the oven for as long as 4 hours. After drying them, store them in a jar, fill half of the jar with olive oil and add a dash of salt and pepper to taste. Sundried tomatoes can be kept for as long as 6 months.

Tomato Soup 




Add an appetizing side of tomato soup to your afternoon salad. Ready a handful of tomatoes and toss in a food processor. Add in your favorite vegan broth and some spices to taste. (To enhance the flavor of the vegan broth recommend putting a dash of oregano, thyme, and rosemary). To finish off, top your tomato soup with fresh cut basil.






Tomato Paste

Tomato paste can be used in most pizza recipes and can be used to make pasta sauce. Making your own paste tastes better than buying it in a grocery store. It takes a while to make them, but it’s manageable. Slice a handful of tomatoes and bring them to a boil in an 8-quart stainless steel pot. Once their juices are watery, squeeze them and strain them to discard the seeds. Put the juices you’ve gathered to a greased pan (preferably with non-stick baking sheet) and add a dash of salt and pepper to taste. Bake them for about 30 minutes, while agitating them after 20 minutes in the oven. You’ll know it’s finished when the tomato paste has turned into a thick paste.

Tomatoes are great vegetables to grow and can be really useful especially because it’s a staple ingredient in a lot of vegan comfort food recipes. However, it must still be considered that your creations may not taste exceptional if you don’t choose quality tomatoes.
